Food!!!

So this post is mostly about food! Something I love to eat and cook (only if I know what to cook)
I have making the decision of what to make. I do have several new cookbooks, so I have been having fun looking through them, and finding things to cook!
We had this last week. It was called Mini frittatas. They are very similar to quiches except without the pie crust.
I took this picture the other morning. (I figured my dad would be proud. I wasn't planning on going anywhere) Nathan came home from school since it was cancelled early, and I look outside, and he is scrapping the snow off my car! (In his uniform!)
If you don't have one of these you should invest in it! I LOVE MY QUESADILLA MAKER!
This is Nathan making our favorite guacamole! Ever since our honeymoon we have been on a guacamole kick!
So here is what our quesadillas and guacamole looked like! The guacamole is in one of the bowls we got from Mexico!

In our guacamole we put:
tomatoes
onion
cilantro
We mix all this together, so you can have pico too if you want
then we add the avocados, limes, and salt

It is so good. I thought I didn't like guacamole, but then I tried it! MMMMM!

I just got my hair cut, and am headed to Arkadelphia. They are having Rush at Ouachita, and tomorrow night is alumni night!

It was a great time marrying my best friend! It's fun to look at pictures from the day, and the video considering it was all a blur to me!
I would love to thank all my family and friends who made it such a special day. Words can't express how much they helped me, and how much I love them!

The Life of a Wife!

Well I am finally home from our honeymoon and a wife!!!
Monday Nathan and I took things easy, and saw family. I went and got somethings from my parents house too.
Tuesday I became a wife!!! :D
I woke up, and began more laundry from our trip... Then I went and ate lunch with the lady's for lunch at Mimi's (We celebrated my mom and Mrs. Janet's bday..belated... and Mrs. Jenny's bday that day!) After that I headed to Walmart...
Let's just say I spent over an hour at Walmart... AHHH. I went with my list prepared. I had planned out the entire week, so I wouldn't have to go back until Sunday or Monday! It was an eventful, and tiring trip.
I got home, and had to bring in ALL the groceries. I should've taken a picture of my full cart and full trunk (but I forgot)
Once I got everything in the house I started to rearrange things, so I could cook easier.
I took it easy for a bit then took on the task!

I decided to make a pizza. It shouldn't be that hard, and plus Rachel Ray set it all out for me! Well as always things don't go the way we plan. I had preheated the oven, and began making the dough for the crust. I get ready to give it time to rise, and smell something burning and smoke coming from the oven AHHH. I open the oven, and realize that there was stuff. There was my new cooling rack, cooking stone, and about 7 PLASTIC chargers... oh geez. Let's just say the top charger is not so good anymore.. It's a little bubbly. HA. I was almost ready to quit, and call Nathan to stop and get a pizza before he came home. I didn't though, and continued on with my cooking.
I started to make the sauce following her directions... I was putting in the tabasco sauce.. 1 tbls, 2 tbls... main my nose hairs were burning.. I decided to stop at 2 (it calls for 2 or 3) Good thing bc it was pretty spicy with just 2.
So I get it all ready to put in the oven. It's in, and supposed to be cooking. Nathan comes home, and we start talking about our days. I look at the pizza, and the crust isn't getting brown. I thought it was really weird. Nathan decided to look, and we realize that I had turned off the oven OH MY! The icing on the cake... right?
Well we pull the pizza out on our new stone, and we can't get the pizza off.. It was stuck to the stone... OOPS!
Good thing though.. It was a really good pizza! All to Rachel Ray for helping me cook my first Wingless Buffalo Chicken Pizza! (Next time I may only do 1 tbls of tabasco sauce even though Nathan liked the spicyness of it!)

Here's the recipe for those that want to try it: (Oh and I'll be sure to include pictures of tonights meal..as well as honeymoon pictures!)

4 servings

3/4 pound chicken breast cutlets (i just used regular chicken breasts)
EVOO (my favorite abbreviation.... Extra Virgin Olive Oil)
2 teaspoons grill seasoning (McCormick's Montreal Steak Seasoning)
1 pizza dough (I used an easy dough mix.. all you had to do was add water)
Flour for dusting
2 tbls butter
1 tbls Worcestershire sauce
2 to 3 tbls hot sauce
1/2 cup tomato sauce
1 cup shredded Monterey Jack cheese (4 generous handfuls)
1/2 cup crumbled blue cheese
3 scallions, thinly sliced (I didn't add this)

Preheat oven 425. Preheat a grill pan over high heat. Place the chicken on a plate and drizzel with EVOO. Season it with the grill seasoning. When the grill pan in hot, cook the chicken for about 3 minutes on each side, until it is cooked through.
Stretch the dough to form a pizza, using flour to help you handle it. Set the pizza on a pizza pan to the side. In a medium skillet over medium heat, melt the butter and stir in the Worcestershire, hot sauce, and tomato sauce.
Remove the chicken from the grill pan and slice it thin. Add the chicken to the sauce and stir to coat. Cover the pizza dough with the saucy Buffalo chicken, cheeses, and scallions. Bake for 18 minutes, or until crisp.

Tonight I'll be making the Ham and Cheese Mini Frittatas. (I'm substituting bacon for ham!)
